摘要 |
<p>PURPOSE:To suppress whitening (phenomenon of cut surface of pumpkin changing into surface provided with white flour with lapse of time) on cut surface of pumpkin sold in a given cut size and to maintain the cut surface free from whitening for long hours. CONSTITUTION:Pumpkins are divided by cutting and directly heated with a heating medium such as hot water, steam or hot air at >=50 deg.C treating temperature or covered with a plastic film and heat-treated. The heating time differs depending upon the heating temperature and is generally 5-50 seconds.</p> |
