According to the invention, food pastes are directly introduced into a drying climate after leaving the mould. Long (6) or short (6k) food pastes are directly transferred from press-mould (7) to drying (8). Long food pastes (6) may be cut down to the packaging length either directly at the mould (7) or after drying by means of an additional cutting device. It is possible to only initially dry the food paste in this way, in particular to warm it up, and to finally dry it in a known manner, for example portion by portions. However, it is also possibly to carry out the whole drying process, i.e. initial and final drying, in particular for short food pastes, according to the invention. The food pastes may be intensively dried at unusual temperatures in the state of the art, from 90 DEG C to 120 DEG C, in particular during final drying down to 15 % or less than 13 % product humidity. In addition, it is proposed that a long food paste long cutting device be arranged directly at the mould, allowing both short and long food pastes to be cut down to their packaging length. When the packaging length of the long food pastes must be precisely sized, a second cutting device may be arranged after drying. A particularly flexible installation for producing a wide range of products, from very long to very short food pastes, is thus obtained. |
