Crackers are produced from a thin wide web of dough emerging from a roll gap by dividing the web into several parallel dough strips of a width equal to the final width of the individual crackers and with rounded and slightly thickened edges. This is done by extrusion through individual nozzles or by a set of pointed dividers in the gap between two smooth rolls.
