PURPOSE:To obtain a food additive, composed of an extract solution extracted from powdery beans or herbs with water and capable of stably inhibiting an angiotensin converting enzyme converting angiotensin I in bodies into angiotensin II having pressor action. CONSTITUTION:A food additive is composed of an extract solution prepared by extracting powdery beans or herbs with water. Seeds of Phaseolus coccineus L, leaves of apple geranium and flowers of Tropaeolum majus L. are preferred as the beans or herbs. The ratio of the beans or herbs to water is preferably 30-50 pts.wt. water to 1 pt.wt. (dry weight) beans or herbs. Thereby, the objective extract solution capable of exhibiting a high level of enzymic activity inhibitory function is preferably obtained. |
