PURPOSE:To obtain the title compound useful for an affected part detecting sensor of medicine transporting material or functional sweetener by treating a substrate solution containing an alpha-mannosylsaccharide compound and a monosaccharide or oligosaccharide with alpha-mannosidase. CONSTITUTION:A substrate solution containing an alpha-mannosylsaccharide compound such as methyl-alpha-mannoside for phenyl-alpha-mannoside and a monosaccharide such as D-glucose, D-xylose or D-galactose and an oligosaccharide such as maltotriose, maltotetraose or maltopentaose is reacted with 17 units/g methyl-alpha- mannoside of an alpha-mannosidase derived from Canavalia ensiformis DC. at 40 deg.C for 24 hours, the reaction solution is heated to 100 deg.C for 10 minutes to thermally deactivate the enzyme, filtered, centrifuged, then purified by high-performance liquid chromatography to give a new alpha-mannosylsaccharide compound (e.g. alpha-mannosylglucose). |
