PRODUCTION OF RAW SOY SAUCE

PURPOSE:To obtain a raw soy sauce having an excellent flavor by filtering a soy sauce raw solution with an organic polymer fine filtration membrane and subsequently filtering the filtrate with a ceramic fine filtration membrane. CONSTITUTION:A soy sauce raw solution is fed from a tank 1 to a polymer organic fine filtration membrane 3 with a pump 2, filtered and subsequently charged in a tank 4. The filtered soy raw solution is fed to a ceramic fine filtration membrane 6 with a pump 5 and filtered. The filtrate is packed in containers with a charging machine and subsequently shipped.
