<p>PURPOSE:To prepare an alcoholic drink having rich flavor and high content of bitter component by subjecting various yeasts to mutagenic treatment, transferring to a specific medium, culturing the yeasts and using the variant yeasts separated from the medium. CONSTITUTION:Yeast such as SAKE yeast, beer yeast and baker's yeast is subjected to mutagenic treatment e.g. by ultraviolet irradiation or with a mutagen such as ethyl methanesulfonate. The obtained variant yeast is cultured in a medium containing 3b-(2-thienyl)alanine (0.02-5mg/mL) at 30 deg.C for about 1 week. A yeast strain separated from the medium (variant strain capable of producing large amount of 3b-phenetyl alcohol, its acetate and tyrosol) is used in the brewing of the objective alcoholic drink.</p> |
