PURPOSE:To selectively ferment pentose at a high speed and also effectively ferment xylose difficult to ferment even in the presence of fructose, by inoculat ing and culturing a specific microorganism in a pentose-containing material. CONSTITUTION:A microorganism [e.g. Pediococcus.halophilus 5P (FERN P-12418)] belonging to the Pediococcus, defective in the cytoplasmic phosphotransferase of phosphoenolpyruvate.dependent.sugar : phosphotransferase.system, and having a pentose-fermenting ability is inoculated on a pentose- containing material and cultured e.g. at 20-40 deg.C in a MYP medium having a pH of 3-9 under an anaerobic condition. |
