PURPOSE:To obtain the subject improver, composed of an aqueous solution containing specific amounts of glucono-delta-lactone, an organic acid (salt), ethanol and water, excellent in pH retention and stability and capable of providing a high-quality food, improved in texture and taste and preservable at ordinary temperature for a long period. CONSTITUTION:A quality improver for a food is composed of (A) 0.5-10wt.% glucono-delta-lactone, (B) 0.05-1wt.% organic acid (salt) which is preferably acetic acid, citric acid, tartaric acid, fumaric acid, adipic acid, malic acid and/or lactic acid, (C) 0.2-3wt.% ethanol and (D) water. Furthermore, the food is preferably noodles, pickles, favorite foods, vegetables, rice grain foods, fish-paste products, processed meat products or fried food products and the organic acid salt is preferably potassium, sodium or calcium salts. |
