The method for obtaining yeast autolysate, consisting in suspending baker yeast in citrate buffer, heating the suspended matter and separating cell membranes from the cell contents, consisting in that the suspension of baker yeast in citrate buffer is heated up to temperature of 50-55 degrees C during 4-6 hours, mixed and at the same time the yeast cells are mechanically crushed by the circulation of the suspended matter in the reactor's external piping system, the suspended matter is drained from the reactor and fed into the reactor again via a crushing tip, and then the suspended matter is cooled down to temperature of 35-40 degrees C and again subject to the mechanical crushing of yeast cells during 22-25 hours and the product of autolysis is heated during 2-5 hours to temperature of 80+-5 degrees C.2. The installation for obtaining a yeast autolysate, consisting of a reactor with a coat, a stirrer and a downpipe, consisting in that the downpipe (4) of the reactor (2) is tipped with a two-channel valve (3) with one channel connected with the downpipe (4) joined with the outlet of a centrifugal pump (5), whereas that pump is via the pipe (6) connected with the reactor (2), and the pipe (6) has a crush-and-guide tip (7) with support components (8) for the ports (9), and a central cone (10) and an external cone (11).<IMAGE>
