PURPOSE:To facilitate a manufacturing of frozen 'sushi' or the like through a sharp freezing of a frozen item in a freezer having a cooling coil by a method wherein atomized liquefied gas injected from a nozzle is sucked through a fan and blown against the frozen item in the freezer. CONSTITUTION:In the case that 'nigiri sushi' is rapidly frozen, an indoor temperature of a freezer is pre-cooled at -40 deg.C to -50 deg.C through a proper means and then product 'sushi' are mounted and stored in a rack 12 for very container. Then, liquefied carbonic gas is injected from a nozzle and at the same time an axial flow fan 9 is driven to make a direct contact of liquefied gas injected in an atomized state and then an indoor temperature of the freezer and a temperature of 'sushi' are rapidly cooled and a pressure within the freezer is kept constant and the indoor pressure is properly reduced, thereby an ice making and generating zone is frozen within a quite short period of time. Then, as a difference between the surface temperature of 'sushi' and a central temperature is almost absent, injection of the liquefied gas from the nozzle 8 and the driving of the axial flow fan 9 are stopped and then a freezing operation is completed. |
