PURPOSE:To eliminate only an old smell emitting during preservation of refined SAKE selectively, efficiently and in a short time and to obtain high-quality refined SAKE free from from the old smell by treating refined SAKE having a feeling of old smell with a cyclodextrin polymer. CONSTITUTION:Refined SAKE having a feeling of old smell is treated with a cyclodextrin polymer (CDP). In the case of treatment by a batch method, refined SAKE is mixed and brought into contact with 1-8% CDP at room temperature for 30 minutes to 3 hours while stirring. CDP, for example, is obtained by crosslinking cyclodextrin with a polyfunctional compound such as epichlorohydrin, etc. |
