PURPOSE: To obtain a stabilized blend useful for a food only by mixing with commercially available food components by blending a specified amt. of sucrose with specified amts. of specified crystalline fructose, a crystalline edible acid, a specified flavor and an anti-caking agent. CONSTITUTION: This blend is obtd. in a stabilized state by uniformly mixing >=20% sucrose with >=10% crystalline fructose contg. <10% particles of <=150μm size, 1-8% crystalline edible acid, a flavor having <=0.4 water activity at 90 deg.F and contg. 30-60% modified starch for food and 30-60% maltodextrin and an anti-caking agent such as calcium phosphate or calcium fumarate so that they are brought into close contact with one another. |
