PURPOSE: To obtain an edible acid delivery system consisting of a granular edible acid, an emulsifier and polyvinyl acetate, protecting the edible acid from the harmful effects of moisture, pH, temp., etc., and useful to produce a gum compsn. by addition thereof to a gum base. CONSTITUTION: Polyvinyl acetate having a mol.wt. of 2,000-65,000 and an emulsifier such as lecithin, a stearate, palmitate or oleate are melted by 30-93wt.% and 2-15wt.%, respectively, of the total amt. of the objective delivery system. An edible acid such as citric acid, malic acid, tartaric acid or ascorbic acid is uniformly dispersed in the resultant melt by 0.1-10wt.% of the amt. of a chewing gum compsn. and they are cooled to ambient temp. under mixing to confine the edible acid in polyvinyl acetate coating. Pulverization to the desired particle size is then carried out and protective layers are further formed if necessary by coating with a hydrophobic mixture contg. fat or wax mixed with an emulsifier to obtain the objective edible acid delivery system. |
