摘要 The method can be used for preparation of low alcohol wine. It allows to reach CO2 saturation of up to 1.5 at. in four days. According to the method, (NH4)2HPO4, (NH4)3PO4 or ammonia is added to the yeast sludge from the primary fermentation until the pH reaches values of 4.5-5.5 and the prepared solution, containing organic and inorganic nitrogen, is used to carry out a secondary fermentation.
