<p>The subject of the present invention is new strains of Penicillium caseicolum which can be obtained from a new strain of Penicillium caseicolum deposited at CNCM under the no. I-1119, and which possess cheese-producing properties. The subject is also a process for the production of these strains, which consists in: - plating spores of the CNCM I-1119 strain on a haploidising medium; - subculturing the colonies appearing on a minimum medium; - selecting, among the strains obtained, those which possess an "antimucor" activity; - isolating among the latter those which possess a restriction profile for the pair HindIII enzyme-DNA probe deposited at CNCM under the no. I-1120, which is identical to one of the profiles B or C. Application: manufacture of cheeses. <IMAGE></p> |
