MELT CRYSTALLIZED XYLITOL Melt crystallized xylitol possesses an agglomerated crystalline structure under a scanning electron microscope: an increased surface area relative to aqueous crystallized xylitol, of at least about 0.12 square meters per gram; and unexpected hardness values when compressed into a tablet. Chewing gum compositions comprising such melt crystallized xylitol are much less tacky and gritty compared to gum compositions comprising equal proportions of conventional aqueous crystallized xylitol of similar particle size distribution. |
