PURPOSE:To improve the cooking and milling characteristics of endosperm removed grain and to enhance the eating quality of adlay by a method wherein the dehulling treatment of adlay is performed using a commercial one-pass type rice cleaner, a screen and a winnower to obtain a large amount of non- cracked cleaned whole grain which is, in turn, immersed in water and subsequently re-dried to be applied to the rice cleaner to separate an endosperm and a germ. CONSTITUTION:The shell of adlay is lightly ground by a commercial one-pass type rice cleaner whose cleaning intensity is set to 1 and the treated adlay is separated into unhulled grain and hulled grain using a screen with a mesh size of 4.00-5.66mm. The unhulled grain is again ground by the rice cleaner. After the total amount of grain is dehulled, the dehulled grain is winnowed to obtain a large amount of non-cracked cleaned whole grain which is, in turn, immersed in water and subsequently re-dried by a blow dryer. The dried cleaned whole grain is applied to a rice cleaner to separate endosperm removed grain and a germ. The endosperm removed grain has the same cooking characteristics as rice and is improved in eating quality. This grain becomes easy to mill and fine good flour can be prepared. |
