PURPOSE:To obtain seasoning preservable for a long period of time at normal temperature by heating a mixture of wheat flour, an alkali substance and water, denaturing protein, gelatinizing starch, drying and successively powdering. CONSTITUTION:Wheat flour is blended with an alkali substance such as potassium carbonate or sodium hydrogencarbonate and water by a mixer. Then the mixture is heated, protein is denatured and starch is galatinized. Then, the heat-treated mixture is dried by a hot air dryer, etc., ground into power by a grinder such as hammer mill to give the objective seasoning for soup of instant Chinese noodles having an enriched flavor of characteristic Chinese noodles. |
