The invention relates to a machine for cutting or filleting fish, comprising mutually parallel cutting devices (4) which lie tightly against the fish backbone and cut the fillets therefrom. Fish, from which the gut or entrails have been removed, are opened out and held firmly against devices (9) which function to guide the fish through the cutting region of the cutting devices. The filleting machine also includes means (14) for adjusting the spacing between the cutting devices (4), so that the cutting devices will closely follow the configuration of the fish backbone. |
