Alkyl galactarates having formula (I), wherein R1 is alkyl or alkenyl having 1-22 carbon atoms; R2, when it is different from R1, is hydrogen, alkyl or alkenyl having 1-22 carbon atoms, but, when identical to R1, is alkyl or alkenyl having 7-22 carbon atoms; and R3 is hydroxy, or forms with R2 a valency bond between the atoms carrying them; and alkali metal, alkali-earth metal and ammonium salts thereof; are surfactants.
