The alkyl galactarates of formula: <IMAGE> in which R1 is alkyl or alkenyl having from 1 to 22 carbon atoms and, either R2 is, when it is different from R1, hydrogen, alkyl or alkenyl having from 1 to 22 carbon atoms, and when it is identical to R2, alkyl or alkenyl having from 7 to 22 carbon atoms, and R3 is hydroxyl, or else R3 forms with R2 a valency bond between the atoms which carry them, and their salts with alkali metals, alkaline-earth metals or ammonium are surface-active agents.
