PURPOSE:To obtain the subject readily drinkable beverage, hardly reducing the content of saponins which are active ingredients and having excellent body by adding whey powder subjected to proteolytic treatment to a medicinal ginseng extract and then fermenting the resultant mixture using a lactose fermentative yeast. CONSTITUTION:The objective beverage is obtained by adding whey powder subjected to proteolytic treatment to a medicinal ginseng extract and then fermenting the resultant mixture with a lactose fermentative yeast (preferably Kluyveromyces marxinaus var. marxianus ATCC 12424, etc.). The amount of the whey powder subjected to the proteolytic treatment is preferably 0.01-1%. Since the flavor of the obtained beverage is the best, fermentation is preferably carried out so as to provide 0.005-0.1% amount of ethanol produced after the fermentation. |
