PURPOSE:To obtain the subject product of good quality, containing beta-glucan having thermal coagulability and a soybean extraction residue and increased in hardness and springiness. CONSTITUTION:The objective product containing beta-1,3-glucan having thermal coagulability and a soybean extraction residue. For example, curdlan produced by Agrobactgerium.radiobacter (IFO 13127) is used as the aforementioned beta-1,3- glucan. Soybean separated proteins, soybean milk powder or extraction residues in producing bean curd are normally used as the soybean extraction residue. |
