PURPOSE:To provide the subject oil which is excellent in metal working performance, rust-preventive properties and storage stability and is lowly foaming. CONSTITUTION:An alkali metal salt of or an amine salt of a condensed fatty acid having a carboxyl group and a hydroxyl group in the molecule and obtained by condensing a hydroxy fatty acid with phosphoric acid, polyphosphoric acid and/or boric acid is used as a water-soluble metal working oil.
