PURPOSE:To produce a microcapsule having a film rich in fastness at the time of usual handling but capable of being efficiently broken when an encapsulated substance is desired to be taken out, in microencapsulation using yeast fungi, by rapidly introducing a large amount of a hydrophobic liquid into a unit fungal cell. CONSTITUTION:In preparing a microcapsule by including a hydrophobic liquid in yeast cells by stirring yeast fungi and the hydrophobic liquid by a stirrer having stirring blades, the peripheral speed of the leading ends of the stirring blades is set to 3-30 m/sec to produce the microcapsule under stirring.
