摘要 PURPOSE:To provide the subject composition containing a specific compound as an active ingredient and having excellent smell, taste and flavor. CONSTITUTION:The objective composition contains a 2-substituted five-membered nitrogen compound of the formula (R is H, 1-3C alkyl, 1-2C acyl; the dotted lines are not bonded or are a single bond; but when the dotted line at the 1-position is the single bond, the dotted lines at the 2 and 4 positions are not bonded or a single bond) as an active ingredient. The compound of the formula is preferably added to the noodles in an amount of 0.001-0.1wt.% based on the noodles.
