<p>A method for preparing partially acylated carbohydrate derivatives, particularly saccharose acetate, by reacting the initial carbohydrate with an acylating agent, wherein the method is carried out in a reaction medium consisting of an organic phase and an aqueous phase. Selecting the organic phase allows the average degree of substitution of the desired partially acylated carbohydrate derivative to be controlled.</p> |
