摘要 This method attains high reproduction of the quality at reduced maturation time. The ageing dry red wines are put into contact with a thermally-treated oak timber, while the phenol storage of wines in abs.u. is determined in advance. The quantity of the timber is 1.4+-0.1 g/l for 30 abs.u. phenol saturation, and the duration of the process is about 70 to 90 days.
