PURPOSE:To obtain juice with fresh flavor, free from odor due to heating, by filtering a liquor produced by squeezing fruits or vegetables followed by putting the resultant solid to hydrostatically pressurization to effect sterilization to enable the fungi and bacteria to be drastically reduced and furthermore complete sterilization. CONSTITUTION:Firstly, a liquor produced by squeezing fruits or vegetables is put to filtration treatment through e.g. ultrafiltration, precoat filtration, or centrifugation. Thence, the resulting solid is subjected to hydrostatically pressurization to effect sterilization. Furthermore, in general, the solid sterilized is mixed with the filtrate to obtain the objective juice. The hydrostatically pressurization is pref. carried out under a pressure within the pressurization chamber at >=4000kg/cm<2>. |
