The article is placed inside the enclosure, allowing the air to flow through from the bottom upwards, this air, saturated or not saturated with moisture, passing through the product at a relatively high speed in order to increase the global coefficient of transmission and adequate transfer of heat from the hot, moist air to the product to be thawed. The flow of air is collected by the aspiration conduit and passes to a metallic unit provided with a refrigeration system. In the refrigeration equipment, the air passes firstly through a cold array or evaporator, via a heat array supplied with hot water and, finally, the general fan impels it via the impulsion conduits from where it emerges towards the lower part of the room, all the aforesaid being directed and controlled by a control robot equipped with the corresponding actuation mechanisms and having probes for monitoring the temperature and relative humidity of the air and also the temperature existing in the outer part of the pieces and in the inner part. <IMAGE>
