The pastry, with a meat filling, is formed by a skinless sausage meat strand which is inserted into a covering of bread dough, and then baked together. The bread covering pref. has an end at least at one side which is unfilled, and projects over the end of the inner sausage, or the bread roll has a crescent shape. The covering is pref. a wholemeal bread dough, and the filling is a strand of minced beef and pork in equal proportions, to give a total weight of 250-350 g. ADVANTAGE - The method gives portion control and a prepd. meat-filled bread roll which can be sold without requiring an eating plate, and without separate handling for the bread and sausage at the point of sale.
