The present invention relates to a method for defrosting a liquid or pasty product (50) to the final temperature, in particular a food product, which method enables the progress of the temperature change throughout the mass of the product to be controlled. For this purpose, the heating operation - preferably using microwaves - is accompanied by an operation in which the temperature is controlled and the product is stirred mechanically which takes place at the same time as the heating operation. The device used to implement the method also includes, in conjunction with the heating means (11 to 16), means (80) for controlling the temperature and means (60) for mechanically stirring the product (50).
