The invention relates to a method for plucking poultry, implementing a conveyor (1) from which the poultry is hung so that it files through a plucking machine (2). The method is characterised in that it consists in making the poultry undergo at least one turn while it passes through the plucking machine. The invention also relates to a plucking machine (2) for implementing the method, equipped, on each of its sides, with a longitudinal device (4, 5) for pulling out the feathers. These devices are made of a set of rotary cylinders (rolls) (11) equipped with fingers (9) for taking hold of the feathers and pulling them out.
