In order to prepare sterilised, evaporated, whole milk, without or with a very small addition of stabilising additives, the standardised milk is subjected to partial homogenisation and then heat treatment before concentration by means of evaporation. The evaporated milk is sterilised after being placed in containers or on line, before filling, in which case the containers are filled aseptically.
<??>The evaporated milk obtained is preserved at ambient temperature without deposition, gelling or separation of the fat.
