PURPOSE:To prevent formation of bitterness when milk-clotting enzyme is used for cheese preparation, by adjusting a milk-clotting enzyme capable of producing Irpex lacteus Fr. to a specific pH, treating it at a specified temperature for <=a specific time so that protease existing in the milk-clotting enzyme is deactivated. CONSTITUTION:A milk-clotting enzyme capable of producing Irpex lacteus Fr. is adjusted to 6.3-6.7pH, treated at 30-40 deg.C for <=30min, so that protease existing in the milk-clotting enzyme is deactivated. When the milk-clotting enzyme is used for cheese preparation, bitterness will not be formed. |
