CONSTITUTION:A milk-clotting enzyme capable of producing Irpex lacteus Fr. is adjusted to 6.3-6.7pH, treated at 30-40 deg.C for <=30min, so that protease existing in the milk-clotting enzyme is deactivated. When the milk-clotting enzyme is used for cheese preparation, bitterness will not be formed.
