PURPOSE:To obtain the title mitigative containing ethylglucopyranoside as an active ingredient, having excellent aging feeling, taste with good body and preservation and useful for marine kneaded product such as boiled fish paste. CONSTITUTION:The objective mitigative containing ethylglucopyranoside (preferably of 0.1-30wt.% based on alcohol solution) expressed by the formula in alcohols such as SHOOCHUU (low-class distilled spirits) as an active ingredient. Furthermore, the addition of the mitigative to marine kneaded product, noodles and cakes improves taste thereof. |
