The sucrose fatty acid polyester is produced by (a) reacting a fatty acid potassium salt, a sucrose and a potassium carbonate with an anhydrous methanol, (b) raising the temp. of the reactant, and refluxing the methanol for 30-60 min., (c) removing at least 90 % of the methanol on the condition of 25-45 deg.C, 20-80 mmHg vacuum degree and 250-350 rpm agitation velocity, (d) removing the residual methanol on the condition of 45-65 deg.C, 0-25 mmHg vacuum degree and 350-550 rpm agitation velocity, and (e) reacting the removed reactant with a soy bean oil fatty acid methyl ester on the condition of 110-150 deg.C, 0.5-3 deg.C/min and at most 20 mmHg for 1-3 hrs.
