PURPOSE:To obtain a readily producible protein food having an emulsion-like texture. CONSTITUTION:A protein food comprising a denatured protein of thermally coagulable protein raw material such as egg white or lactoalbumin, having a denaturation degree of the thermally coagulable protein raw material of <=50% as a ratio of soluble protein with 0.1M phosphoric acid buffer solution having 3% salt concentration and of >=25% as a ratio of soluble protein with 0.1 M phosphoric acid buffer solution having 3% salt concentration and 0.5% SDS(sodium dodecyl sulfate) concentration in the protein of the thermally coagulable protein raw material. |
