Ready prepd. prod. for potato chips and similar prods. is made by first cutting peeled potatoes into chips or other shapes and opt. blanching and cooling them. The chips are then heat treated in a non-fat medium for a period such that they are still just not cooked, after which they are partially dried. The chips contain little fat and have good storage properties at normal refrigerator temps. (4 degrees C). When required for consumption, they can be deep dried easily in hot fat to give high quality fried chips. |
