In order to selectively remove non-volatile substances such as sugar from alcoholic or non-alcoholic beverages, the sugar is first separated in a membrane separator (2) by an appropriate choice of membrane (4). The permeate containing the separated sugar is introduced into the retentate circuit (10) of a nanofiltration (9). By introducing a washing liquid into the retentate circuit (10), the sugar is washed out and evacuated as a sugar-enriched solution, whereas the permeate from the nanofiltration (9) is returned to the permeate side of the membrane separator (2).
