PURPOSE:To obtain the title raw noodles useful for raw RAMEN (Chinese noodles) having excellent long-term shelf stability, restoration, soft feeling and springiness by making long strips of noodles from wheat flour, etc., packing into an air-diffusible packaging bag, heating and sterilizing by a high-frequency generator and rapidly cooling. CONSTITUTION:Wheat flour or starch as a raw material is made into long strips of noodles, which are primarily packed into an air-diffusible packaging bag 1B such as PP, successively heated and sterilized by a high-frequency generator and rapidly cooled by a refrigerator or cooler to give the objective raw noodles 1A wherein bacterial growth is suppressed. The noodles are provided with an alcoholic preparation and secondarily packed to give raw noodles having excellent restoration and springiness. |
