PURPOSE:To obtain a snack confectionery having high merchandise value with hardly any cracking according to an extremely simple method. CONSTITUTION:The subject method is to produce a protein-enriched snack confectionery by forming a dough, drying and baking the formed dough in the aforementioned order is characterized as follows. The above-mentioned drying is performed so as to provide <=2.0% (wt./wt.) moisture content.
