<p>PURPOSE:Several kinds of raw vegetables are rapidly precooled to supress the respiration of these vegetables, cut and mixed to produce mixed vegetables that can be stored for a long time with high freshness kept. CONSTITUTION:Several kinds of raw vegetable such as lettuce, cabbage, carrot, cucumber or green pepper are, immediately after harvested and removed contaminants, precooled to adjust the temperature of these vegetable to 1-7 deg.C. Then, these vegetables are cut in water kept to 1-3 deg.C each and the resultant vegetables are mixed in water that is kept to 1-3 deg.C and contains about 0.1% of fatty acids. After drained, the mixture is packed and stored preferably at 1-3 deg.C.</p> |
