PURPOSE:To obtain the title drink being excellent in nourishing and health aspect and having flavor by making seed of buckwheat to which husk is attached germination-active state and successively subjecting the seed to steaming by high pressure steam, drying, baking, crushing and then extraction at high temperature and high pressure. CONSTITUTION:Seed of buckwheat to which husk is attached is immersed in water at 35-40 deg.C for 6-24hr to make the seed germination-active state. Then the seed is subjected to steaming by high pressure steam to gelatinize starchy material of seed of buckwheat. Then seed of gelatinized buckwheat is dried until water content becomes <=10% and baked at 180-190 deg.C. Further, baked seed of buckwheat is crushed and then softened in state containing husk by high pressure steam and subjected to hot water extracting. |
