PURPOSE:To obtain the title product reduced in astringent taste and sourness, readily drinkable regardless of its high concentration and having vivid color tone by subjecting cranberry juice to gelatin treatment and then adding a sodium salt or potassium salt of an organic acid thereto. CONSTITUTION:Cranberry juice is subjected to gelatin treatment and then potassium salt (preferably soldium citrate, potassium malate, etc.) of an organic acid is added thereto. In detail, preferably, 0.003-0.1% gelatin is added to juice and the mixture is allowed to stand and then precipitate is removed from the juice by filtration, etc., and a sodium salt or potassium salt of an organic acid is added to the clarified juice at such amount as to keep pH of juice to 3-3.4 and then saccharide is added thereto and the mixture is filtered and sterilized and packed into a vessel. |
