PURPOSE:To obtain coffee drink and coffee soft drink having combination of color and taste which did not exist hitherto by utilizing coffee leaves which has been not utilized hitherto as a raw material for drink. CONSTITUTION:Coffee raw leaf which is not fermented and is kept in state of green leaf is cleaned and then subjected to steaming treatment (deactivation of enzyme) and as necessary subjected to hot air drying and finely cut to afford coffee tea and hot water extract is produced using the resultant coffee tea or processed coffee tea obtained by further heating the coffee tea as a raw material. When carbonic acid and desired additives are added thereto after similar production process, coffee tea soft drink is obtained. In this case, fermented coffee raw leaf can also be used as the raw material. |
