PURPOSE:To obtain a low salt fermented acidic seasoning having an abundant taste and also a harmonization between acidity and taste. CONSTITUTION:A protein raw material, carbohydrate raw material or a mixture thereof is digested and hydrolyzed in a low salt concentration to give an unpurified digested seasoning or a separated solution thereof, which is subjected to acetic acid fermentation in the presence of ethanol to give the objective low salt fermented acidic seasoning. |
