PURPOSE:To stably produce squalene in good productivity at a low cost by culturing an ergosterol metabolism-mutated yeast in a medium containing a sterol and further containing a yeast extract and urea as nitrogen sources. CONSTITUTION:An ergosterol metabolism-mutated yeast capable of storing squalene is cultured in a medium containing a sterol (e.g. ergosterol or cholesterol) and containing yeast extract and urea as nitrogen sources, and squalene is collected from the cultured product. The yeast includes a novel microorganism, e.g., Saccharomyces.diastaticus moy 500-A-6 strain(FERMP-12085). |
