A method of obtaining frozen concentrates of mesophilic lactic bacteria by inoculating the inoculum broth of mesophilic lactic bacteria and breeding the bacterial culture until pH 5.0 is obtained, then the neutralization system is activated and the culture is further bred at a pH level between 6.4 and 6.6 characterized in that after the breeding process is completed, sterile protective substance is added to the obtained biomass in an amount between 80.0 and 120.0 ml per one litre of the biomass, which contains saccharose in the amount of 80.0-120.0 grams, glycerin in the amount of 20.0-60.0 ml, powdered milk in the amount of 10.0-30.0 grams, wort in the amount of 35.0-65.0 ml, water to top up to 1 litre, and further the bred bacterial mass together with the protective substance is frozen according to the already known method.
